Dr. Matthew T. Herbst is a professor at UC San Diego, where he directs the Making of the Modern World, a general education world history program, co-directs the Classical Studies Program, and is faculty co-director of Study Abroad.
Catered by Ursa- A new restaurant concept that aims to highlight foraged ingredients from the desert southwest region. In order to honor the land that reared him, Chef Aaron is motivated to share with his guests the indigenous products that grow in the desert and to present an alternative viewpoint. He works with nearby farmers and foragers to source food sustainably and ethically, and he takes great care in choosing his produce and goods. Ursa's food aims to achieve a zero-waste kitchen by utilizing all elements of these goods through preservation processes.
